That's what I did, try to match the total heights of the wheels. 235/40 and 265/35 are virtually identically in height, 275/30 will be almost 1" shorter and about half an inch shorter than stock. 235/35 are the same height as 275/30 but about half an inch shorter than stock.
And by stock I'm referencing the square setup for 18" I had that were 225/45/18
