My 7, 5 and 2 year old all use their iPads, just make a sure they have a decent case for when the inevitably drop them when they dose off. I'm not sure what the big deal is about wanting front seat control, but you can use
Screen Time if you want to limit their access to apps and content. Disney+, Netflix, Nick Jr. and Youtube Kids are all easy enough for them to self navigate and find things to watch.
