I just placed an order with the Black Merino leather. I went with extended, since it wasn't worth it to me to get the leather on the door bottoms, etc. The X5 now comes standard with a Sensatec dashboard which also includes Sensatec on the tops of the doors. I didn't feel I needed any more than that.
As far as trim goes, I was also deciding between the fineline stripe and the anthracite matte. I ended up going with the matte finish. It looked a bit more modern to me, and was more grey than brown, which goes well in the black interior. I have glossy wood in my current X5, so I kind of wanted a change as well. Both are very nice. Can you see both for yourself at your local dealer? That may be helpful.
