On low gear and maybe 50% throttle or 60 % I get very very bad sputters and backfires and I throw a lot of black smoke and you can actually here the engine sputtering

I would check the plugs if you haven't already! Also consider datalogging (you can do this within BM3, just go to dashboard and on the top right hit the LOG button) and check for codes too. You can do this within BM3 as well under the diagnostic tab.
And as far as safe burbles on the stock cat, I would stick with the OEM if you want it to last.
