When I learned to drive a manual, a long, long time ago in a galaxy far away, I had to learn the shift points by touch and feel; no rev matching, no tachs.
If one wants the true old experience, then go for a manual that really requires you to feel the shift points. Otherwise, I don't see a big difference between shifting a modern 3 pedal car and using the paddle shifters.
