A glossy finish is going to be harder and provide better protection, but surface scratches are going to be noticeable as they will interrupt that shine. On a good note, those scratches will typically easily "buff out", but something to keep up constantly with if you like your interior looking pristine.
The matte finish is going to hide scratches from normal wear and tear better, so perhaps more ideal with having less maintenance for daily use, but the softer finish will provide less protection from a deeper scratch. While the deep scratch may be more likely with the softer finish, it is also easier to repair with decent results. I've seen people do wonders with a fine sandpaper and some good quality colored pencils.
