Is there dedicated terrain (snow, mud, sand) options with x drive? Can’t find them.

No. The X drive does all the work.

Actually, for 2019 and 2020, there was an off road package option that included skid plates and those specific x drive modes for snow, mud and sand. I forget the specific name of the package, but it is no longer available - at least on the US BMW site.

ZOR Off-road Package on X5 and X7.

X7 ZOR included 353 xOffroad Package and 2T4 M Sport Differential.

353 included xOffroad camera programming
