I know E38's like the back of my hand, but still struggling with F30's.

I will be installing Bilstein PSS coilovers on my 2012 328i Sportline Saturday. I do not ever plan on slamming it and will lower it just enough to eliminate wheel gap.

I'm looking at a set of 19x8.5 et35 and 19x9.5 et35 wheels. I know the fronts will fit perfect, but will the rears fit without rubbing?

Very common, you'll be fine. Most people run 265/30 or 255/35 for that rear fitment.

I actually have a set of wheels in those exact sizes sitting in the garage that will be going on my car soon.

The rear will fit nicely without rubbing as long as you're running some camber and stiffened suspension. I have the et35 front and et33, really aggressive look, however i'm pretty low, tucking a little tire. To make it work with no rubbing, my suspension is really stiff and I have -2.6 camber in the rear

The PSS coilovers don't have any adjustment so I can't firm them up even if I wanted to. I also want to run factory camber specs so excessive negative settings is out as well. I don't plan on tucking tire or stancing it out. PSS's run 30mm lower to start with from stock and I'm already 10mm lower with my sport suspension so the PSS will give me 20mm lower at their highest point. I might go another 10-15mm just to eliminate most of the wheel gap and leave just about a fingers width visible.

If I just run 19x8.5 ET35 square all the way around I should be fine correct?

Yeah you should be fine with the square setup, but if you want the 9.5 in the rear, et35 can work. You can go on the safe side by getting 9.5 rear et45 and it will be flush, and you can adjust with spacers for more aggressive look.
