Is setting UT % to 0 the same as stock? I want to dyno my car soon and would like to see its stock performance without procede.

No it wont put it to stock, it will put it on stock boost. Or close to it.

Why not use the valet feature?

If you want a true back-to-stock test, just pop in the bypass plugs. Valet and 0% user torque is *close* to stock though.
