Because of the way they apply the paint, it is fully cured before the car is even completely assembled (at the factory). It is different at your local paint shop because your local paint shop does not have multi-milltion dollar robots inside industrial kilns doing the paint work. So it is safe to wax/seal on delivery.
I would wait to work on the interior. As long as the car smells new things in there are letting off fumes. edit: get some z2 and z6 while you are at it

My take is just as soon as possible after taking delivery you should strip and claybar your car's finish to get rid of all the contaminates from the factory and shipping. Run your finger over the finish when you first get the car then after stripping and claybarring run your finger over the finish, again...smooth as a babies butt.
Then apply Zaino AIO with accelerator, then either of the other polishes by Zaino. From then on your car's finish is protected much better from contaminaters like tree sap, bird do, acid rain and such. Until you do this you really have very little protection for the finish on your car. Then as you have time and the desire for a deeper shine more of the polish. Either way after Zaino it's much easier to clean and keep clean. Call
