What offsets should I be looking for if I want completely flush fitment on my 04 3.0?

The best offset you want to go with would be a ET40 up front and a ET45 in the rear on a 9.5" wheel. If you don't think that's flush enough, a small spacer might do well, but get the wheels first, they look awesome on this set up.

Do you have any pictures of that setup? I'm sure there are some on here but it's hard to tell who really has what.

Is there a difference in the wheel face's concavity between the 18x9.5 +45 and the 18x9.5 +33? The seems like a tremendously ideal track setup...

And can anyone speak to how well the 18x8.5 +35 setup would work up front? I know the stock offset is +42 and a difference of 7mm does seem a bit on the high side...

Track set ups for the Z4M Have not been tested, but I would figure that a 18x9.5" ET33 all around or even a ET22 in the rear and ET33 up front might be pretty decent.

As far as the 18x8.5" ET35 offset up front, it's aggressive, but not aggressive enough to cause any rubbing issues, which is essentially what most people want.

I think ET22 is pushing it for our car. I wouldn't recommend it especially if you can easily go with 18x9.5 all around in +45 and +33. Can you tell me whether there is a difference in the concavity of the wheel face between the +45 and +33 19x9.5 wheels??

There is no concavity difference between the offsets actually, it's the sizing of the wheel (9.5" and 8.5") that is making the concavity different.

As for the ET22 not fitting right, the Z4M can very easily fit a ET22 in the back. Here's a Z4M Coupe with that set up in the rear, (yes, it's a 19" CSL wheel, but it's still 9.5" ET22, so the visual aspect of it will look identical):

I don't know, man. I run a 19x9.5 +25 with a 275/30/19 tire and I rub on significant dips. I am on stock suspension with a stock alignment. In fact, at ALL 6 track events I've done with them on, there is some rubber built up on the inside of the rear wheel well. And these are RE01R's which are not the "squarest" tire out there either.

The +22 offset obviously fits but you really will rub if you drive near the limit (on closed circuits of course) or occassionally on a significant dip in the road.
