Easy peasy one for you. Chicken Dauphinoise. Prep is about 15 minutes, cooking is 3/4 hour or so.
You will need: Potatoes Butter Olive oil Garlic Plain flour Seasoning Tarragon (fresh or dried ie Schwartz) Double cream (quite a bit!) Peel enough decent red potatoes for four and cut into 1cm thick slices. Put in salted water, bring to the boil and cook for another 5-10 minutes or so. You're not making mash so don't go mad. While the potatoes are on get four chicken fillets and coat with the plain flour, seasoning and a little of the tarragon. Basically a plate with the flour etc and just turn the chicken on it. Heat a frying pan and add a decent knob of butter and a little olive oil. The olive oil is just replacing more butter, it's my nod to healthy living. Add the garlic (garlic paste is good for this), a little more tarragon and the chicken. Fry gently until both sides are very light brown. Turn off the heat. Now just get a shallow dish and put the chicken in plus the melted butter etc from the frying pan. Then put your part cooked sliced potatoes on top. You're supposed to layer but I can't be arsed. Now pour your cream all over it. The cream should cover 3/4 of the chicken/potato so get enough. Use a drop of milk if you're struggling. Season again and put in a medium oven for 1/2 - 3/4 hour. Let it bubble for a while and the chicken should be cooked. Serve with asparagus. It's terribly bad for you but very nice. |
