tire size help

I got a square set up of 19 x 8.5 rims for my E92 (not lowered)
I was thinking of running 235 35 19 in the front & 255 30 19 in the rear.

My tire shop wants me to do 255 40 19 in the rear. Is the tire shop correct?

What are the benefits of runnin a 255 30 19 in the rear vs a 255 40 19 in the rear?

Find a new tire shop, unless you like instantly grinding your fender liners away. Your shop is smoking some good stuff.
